Fabio Guelfi is a native of Pisa, Fabio spent his early career gaining experience at several 5 star establishments in Tuscany. His expertise allowed him to travel and further his knowledge at restaurants throughout Europe and the United States, including the legendary Daphne’s in Chelsea, London and the Toscana Ristorante in Connecticut, USA where his cooking received rave reviews in the New York Times. Fabio has a passion for true Tuscan cuisine, both traditional and contemporary, which he will introduce into the cooking classes, taking advantage of the abundant seasonal produce.
